Chicken Marengo

This dish is said to have been created by Napoleon's chef after the battle of Marengo in 1800. It's a nicely seasoned combination of chicken, tomatoes, and mushrooms.

Ingredients:

  • 1 frying chicken, cut up, or 3 to 4 pounds chicken pieces
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • 1/2 cup chopped onion
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup dry white wine, or use chicken broth
  • 2 tomatoes, peeled and quartered, or 1 (15 1/2-ounce) can diced tomatoes
  • 1 cup fresh sliced mushrooms

Preparation:

Coat chicken with olive oil in a heavy skillet. Brown chicken pieces over medium heat. Add garlic, onion, seasonings, and wine or broth. Cover and cook slowly until chicken is tender and juices run clear, about 25 to 35 minutes. Add tomatoes and mushrooms about 5 minutes before chicken is done.
Serves 4 to 6.
