Chicken with Sour Cream Sauce

This flavorful chicken recipe is easy to prepare and cook in the skillet. If you're looking for an easy chicken recipe, this one is a great choice!

Yield: Serves 4

Ingredients:

  • 3 to 3 1/2 pounds chicken pieces
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 1 small green bell pepper, chopped
  • 1 tablespoon sweet Hungarian paprika
  • 1 cup chicken broth
  • 3 tablespoons flour
  • 1 cup sour cream
  • salt and pepper, to taste

Preparation:

Wash chicken pieces; pat dry. Heat oil and butter in a skillet over medium-low heat. Brown chicken pieces in hot fat on all sides. Remove chicken and all but 2 tablespoons of the drippings. Cook onion and green bell pepper in remaining drippings until tender, about 2 to 3 minutes. Blend in the paprika. Add chicken broth to skillet; return chicken to skillet. Cover and simmer chicken for 45 minutes, or until chicken is tender and juices run clear. Remove chicken to a hot platter; keep warm.

Strain liquid in skillet; skim off excess fat. Blend flour and sour cream together; stir into strained liquid. Cook, stirring, until thickened. Season with salt and pepper; pour over chicken.
Serves 4.

I made this for dinner tonight and wasn't sure if my family would like it but I had to use up some sourcream so I decided I might as well. And it was great. I didn't take out the Onions or the Bell peppers though.. And I made some white rice to go with it and put some of the sauce over top of it and it was very good. :)
