Chicken with Sour Cream Sauce

Skillet chicken recipe with sour cream, peppers, onion, and other ingredients and seasonings.

Cook Time: 60 minutes

Ingredients:

  • 3 to 3 1/2 pounds chicken pieces
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 1 small green bell pepper, chopped
  • 1 tablespoon sweet Hungarian paprika
  • 1 cup chicken broth
  • 3 tablespoons flour
  • 1 cup sour cream
  • salt and pepper, to taste

Preparation:

Wash chicken pieces; pat dry. Heat oil and butter in a skillet over medium-low heat. Brown chicken pieces in hot fat on all sides. Remove chicken and all but 2 tablespoons of the drippings. Cook onion and green bell pepper in remaining drippings until tender, about 2 to 3 minutes. Blend in the paprika. Add chicken broth to skillet; return chicken to skillet. Cover and simmer chicken for 45 minutes, or until chicken is tender and juices run clear. Remove chicken to a hot platter; keep warm.

Strain liquid in skillet; skim off excess fat. Blend flour and sour cream together; stir into strained liquid. Cook, stirring, until thickened. Season with salt and pepper; pour over chicken.
Serves 4.

"I liked this recipe a lot (but then again, I like sour cream alot!) but I thought it needed a little more oomph....here's what I did second time around, and it was scrumptious: 1. instead of green pepper I used red, I like the sweeter flavor 2. I used homemade chicken broth with better depth of flavor 3. I added a sprig of fresh thyme, some fresh garlic, and a teaspoon of tomato paste to simmer sauce.Yum! 4. I did not strain out the onions and pepper when thickening the sauce."
