Ingredients:
- 3 to 3 1/2 pounds chicken pieces
- 1/2 lemon
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper
- 1 teaspoon rosemary leaves, crumbled
- 1/2 cup orange juice
- 4 to 6 medium potatoes
- 6 to 8 small peeled carrots
- chopped fresh parsley, optional
Preparation:
Rinse chicken; pat dry. Squeeze lemon over chicken; sprinkle with salt, pepper, and rosemary and rub over the chicken pieces. Place chicken in a heavy kettle or Dutch oven with tight lid. Add orange juice, 1/2 cup water, potatoes, and carrots. Bring to a boil; cover and reduce heat. Simmer until chicken and vegetables are tender, about 45 minutes. Arrange chicken and vegetables on a serving dish and sprinkle with parsley, if desired.
