This is a tasty chicken recipe with rice and vegetables, along with ketchup and seasonings, cooked in the skillet.
Ingredients:
- 2 to 3 tablespoons oil
- 3 pounds chicken pieces
- 1 clove garlic, minced
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 jar (12 to 16 ounces) small white onions, drained
- 1 1/2 cups frozen peas and carrots, cooked and drained
- 3 cups cooked rice
- 3/4 cup water or chicken broth
- 2 tablespoons ketchup
Preparation:
Heat oil in a large skillet over medium-high heat; add chicken. Brown chicken on all sides. Add garlic, 1 teaspoon of the salt, and 1/4 teaspoon of the pepper. Reduce heat to low, cover, and cook over low heat for about 30 minutes,or until chicken is tender. Add onions, peas and carrots, and remaining salt and pepper. Top with the cooked rice. Combine water and ketchup then pour over rice. Cover and cook until most of the liquid is absorbed and vegetables are hot.
