Seasoned Chicken Leg Quarters

Flavorful chicken leg quarters are browned then simmered with onion, garlic, tomatoes, and Italian style seasonings.


  • 4 chicken leg quarters (legs with thighs)
  • 1 tablespoon vegetable oil
  • 1 medium onion, quartered, sliced
  • 1 clove garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 green bell pepper, cut in strips
  • 1 teaspoon dried leaf basil
  • 1/2 teaspoon dried leaf oregano
  • salt and pepper


In a large skillet, heat oil over medium heat. When oil is hot, add chicken and brown on all sides. Add onion and garlic; cook until onion begins to brown. Add remaining ingredients; cover and simmer for 35 minutes, or until chicken is tender and juices run clear.

Skillet chicken leg quarters, Italian seasonings, Member bluelace999

A very nice dish - especially if you are as fond of quarters as we are (a rather economical choice at the meat counter). The only thing I did differently was to dredge the chicken in a lightly seasoned flour mix before browning in the skillet. The seasonings are in no way overpowering, and the appearance is appealing with the tomatoes and fresh peppers adding color. My husband, who originally said ""No thanks"" to chicken ended up eating everything that was left over. Nice sides would be other vegetables (summer squash or zucchini perhaps, broccoli, whatever) and/or rice cooked with similar seasonings. I've made it several times; it's always good.
