Ingredients:
- 1/2 pound boneless chicken breasts, skinless
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 2 cans (15 to 16 ounces each) kidney beans, drained
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (4 ounces) chopped green chile peppers
- 1/2 cup water
- 2 teaspoons chopped cilantro
- 2 teaspoons chili powder
- 1/2 teaspoon cumin
Preparation:
Cut chicken in bite-size cubess. Spray a large skillet with cooking spray. Brown chicken over medium heat; add remaining ingredients. Cover skillet and simmer for 25 minutes, or until chicken is tender.Serves 4.
