Chicken With Wine

Quartered chickens make this an easy dish to prepare that's just as easy on the budget. Serve this chicken with rice or potatoes for a delicious everyday family meal.

Ingredients:

  • 2 frying chickens, quartered
  • 1/3 cup olive oil
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 can (14.5 ounces) diced tomatoes
  • 3/4 cup dry white wine

Preparation:

in a Dutch oven or heavy saucepan, brown the chicken pieces in olive oil until golden brown. Sprinkle with the onion, garlic, salt, and pepper. Cover and simmer over low heat for 30 minutes. Add the tomatoes and wine. Cover and simmer for 15 minutes; uncover and simmer for 15 minutes longer.

Serves 8.
