Ground Beef and Corn Skillet Meal

Serve this easy skillet meal with biscuits and a green salad.

Ingredients:

  • 1 pound ground round or ground chuck beef
  • 1 cup soft bread crumbs
  • 1 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons Canola oil
  • 1 1/2 cups corn kernels (about one 12-ounce can, drained)
  • 1 medium onion, sliced
  • 1 large can tomatoes, drained and diced (about 28 ounces)

Preparation:

Mix ground beef, bread crumbs, 1 teaspoon salt, and pepper. Heat oil in skillet (with a cover) and cook meat mixture, stirring frequently, until well browned. Add corn and onion and sprinkle with remaining 1/2 teaspoon of salt. Add tomatoes; cover and simmer for 25 minutes.
Serves 4 to 6.

Not bad in a pinch. Needed something else. Maybe some noodles or something, or even some tomatoe sauce. Good for a one pan meal. Threw some panfried potatoes in with it to give it a little more weight. Also added a bit of garlic.
