Rice and Beef Hash

A flavorful beef hash recipe with tomatoes and rice and cheese.

Cook Time: 20 minutes

Ingredients:

  • 1 pound lean ground beef
  • 1/2 cup chopped onion
  • 1/3 cup chopped green bell pepper
  • 1 can (about 15 ounces) chopped tomatoes
  • 2 cups cooked rice
  • 1 tablespoon chili sauce
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup shredded American or mild cheddar cheese

Preparation:

Directions for rice beef hash
In a large skillet over medium heat, cook ground beef, onion, and green pepper until ground beef is browned and onion is tender. Drain of excess fat. Stir in tomatoes, rice, chili sauce, salt and pepper. Reduce heat, cover, and simmer beef hash for 10 minutes. Sprinkle cheese over beef hash; cover and cook beef hash for a few more minutes to melt cheese.
Beef hash serves 4.

"I only used 8oz of tomatoes, replaced the salt with season salt, omitted the pepper substituted the rice for pasta shells and added 2 packages of McCormic brown gravy mix; It came out great!"
