Ingredients:
- 4 to 6 pork chops, about 1/2 to 3/4 inch thick
- 2 tablespoons olive oil
- 3 tablespoons flour
- 1 1/2 teaspoons Creole seasoning
- 1 medium onion, quartered, sliced
- 2 ribs celery, sliced
- 1/2 bell pepper, diced
- 2 small cloves garlic, finely minced
- 1/2 cup dry white wine
- 1 can (14.5 ounces) tomatoes
Preparation:
Combine the flour and Creole seasoning. Dredge the pork chops to coat both sides; set aside.
In a large skillet over medium heat, heat the olive oil. Add the onion, celery, and bell pepper. Cook, stirring, until vegetables are softened. Remove vegetables to a plate and set aside.
Add the chops to the skillet and brown for about 3 minutes on each side. Add the vegetables back to the skillet along with the garlic, wine, and tomatoes. Bring to a boil. Cover, reduce heat to low, and simmer for 30 minutes, or until chops are tender.
