Ingredients:
- 1 small mango, peeled, seed removed, diced
- 2 small peaches, peeled, pitted, diced
- Juice of 1 medium lemon
- 1 tablespoon honey
- 4 green onions with about 2 or 3 inches of green, thinly sliced
- 2 tablespoons seasoned rice vinegar
- 1 teaspoon Cajun or Creole seasoning
- Pinch garlic powder
- Dash salt
- 2 tablespoons olive oil
- 4 to 6 pork chops
- Salt and pepper
- 1/2 cup chicken broth
Preparation:
Heat olive oil in a large skillet over medium-high heat. Wash pork chops and pat dry; sprinkle with salt and pepper. Brown the chops for about 3 to 4 minutes on each side. Add chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 1o minutes. Add mango peach mixture and simmer, uncovered, for 10 to 15 minutes longer. Serve chops with the fruit.
Serves 4 to 6.
