Pork Chops With Mango and Peaches

These easy skillet pork chops make a great everyday meal with rice and a tossed salad or steamed vegetables.

Ingredients:

  • 1 small mango, peeled, seed removed, diced
  • 2 small peaches, peeled, pitted, diced
  • Juice of 1 medium lemon
  • 1 tablespoon honey
  • 4 green onions with about 2 or 3 inches of green, thinly sliced
  • 2 tablespoons seasoned rice vinegar
  • 1 teaspoon Cajun or Creole seasoning
  • Pinch garlic powder
  • Dash salt
  • 2 tablespoons olive oil
  • 4 to 6 pork chops
  • Salt and pepper
  • 1/2 cup chicken broth

Preparation:

In a small bowl combine the diced mango and peaches, lemon juice, honey, green onions, vinegar, Cajun seasoning, garlic powder, and a dash of salt. Let stand at room temperature for about 1 hour or refrigerate overnight.

Heat olive oil in a large skillet over medium-high heat. Wash pork chops and pat dry; sprinkle with salt and pepper. Brown the chops for about 3 to 4 minutes on each side. Add chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 1o minutes. Add mango peach mixture and simmer, uncovered, for 10 to 15 minutes longer. Serve chops with the fruit.
Serves 4 to 6.
