Spirited Stews

Delicious stews made with wine or beer

By Diana Rattray, About.com

Wine or beer add wonderful flavor to many dishes, particularly meat stews. After browning meat for your favorite stew recipe, deglaze the pan with a few tablespoons of red wine then add the liquid to the meat and vegetable mixture. Or, try replacing part of the liquid with a good beer.

In general, you should cook with a wine you would drink, but it doesn't have to be your special Cabernet or Merlot. Commercial cooking wines do the job, but an inexpensive bottle of drinking wine has fewer additives and will probably be a better value.

If you don't want to cook with wine or beer, but want to try a "spirited" recipe, experiment with non-alcoholic wine or beer, or use broth, apple juice, or a combination of both. Experiment with your favorite recipe, or try a beef stew recipe from the list below.
