Fruit Soup Recipe

This fruit soup, from Sonja, is made with dried fruits and orange juice, spices and tapioca.

Ingredients:

  • 12 ounces mixed dried fruits
  • 1/2 cup light or dark raisins
  • 4 cups water
  • 2 cups orange juice (or grape juice for a different taste)
  • 2 tablespoon quick tapioca
  • 1/2 teaspoon salt
  • 1/2 cups sugar
  • 6 whole cloves
  • 1 stick cinnamon

Preparation:

Combine ingredients and simmer for 30 to 40 minutes or until all fruits are tender. Remove cinnamon and cloves. This may be served either hot as soup, or cold as dessert. Either way we love it.

Note from Sonja:
We always have this change of pace, delicious dish during the cold January days. It is of Norwegian origin, properly called "Saft Suppe".
