Zucchini Soup

Easy zucchini soup with curry and dill.

Cook Time: 20 minutes

Ingredients:

  • 2 cups chicken broth
  • 3 cups cubed zucchini, unpeeled
  • dash of curry powder to taste
  • dash of dried dillweed, or to taste
  • salt and pepper to taste
  • 1 (8 ounce) package of cream cheese, softened

Preparation:

Heat chicken bouillon. Add cubed zucchini and cook until soft, about 15 to 20 minutes. Season zucchini with curry powder, dill, salt and pepper. Pour the hot zucchini with liquid into a food processor or blender. Add cream cheese and carefully process until mixture is smooth. Serve immediately.
