This recipe is time consuming but well worth it.
Ingredients:
- 2 yellow onions, chopped
- 3 carrots, peeled, chopped
- 3 stalks celery, chopped
- 2 medium baking potatoes, peeled and diced
- 2 small to medium zucchini or summer squash, diced
- 1/2 pound green beans, cleaned and ends cut off, sliced
- 1/2 head (small) green cabbage shredded
- 1/4 cup olive oil
- 1/3 stick butter
- 5 cups water
- 4 beef bouillon cubes
- 1 large can (approx. 29 ounces) and 1 small can (14.5 ounces) diced tomatoes, undrained
- Salt and pepper to taste
