Spaghetti and Meatballs Recipe

Spaghetti and meatballs in a tomato sauce with basil and oregano and garlic and green bell pepper.

Ingredients:

  • Meatballs:
  • 1 pound lean ground beef
  • 1/2 cup fine dry bread crumbs
  • 1/2 teaspoon leaf oregano, crumbled
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • .
  • Sauce:
  • 4 ounces sliced mushrooms, or about 1 cup
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped green bell pepper
  • 2 tablespoons olive oil
  • 2 cans (about 15 ounces each) stewed tomatoes
  • 1 can (6 ounces) tomato paste
  • 1 cup beef broth
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano, crumbled
  • 1/2 teaspoon dried basil, crumbled
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 16 ounces spaghetti, cooked and drained
  • grated Parmesan cheese

Preparation:

Combine ground beef, bread crumbs, 1/2 teaspoon oregano, 1/2 teaspoon salt, 1/4 teaspoon pepper. Gently mix well. Shape into 1-inch meatballs. Heat 2 tablespoons of olive oil in a Dutch oven. Brown meatballs in hot oil; remove from pan and set aside. Drain off all but 2 tablespoons of drippings. To the remaining drippings in skillet add the mushrooms, chopped onion, green bell pepper. Sauté until onion is tender, about 5 minutes. Stir in tomatoes, tomato paste, 1 cup beef broth, parsley, 1 teaspoon oregano, 1 teaspoon salt, 1 teaspoon sugar, and 1/4 teaspoon pepper. Bring to a boil; reduce heat, cover, and simmer for 20 minutes. Return meatballs to sauce and cook for 5 to 10 minutes, or until meatballs are heated through. Let meatballs and sauce stand a few minutes; spoon over hot spaghetti and sprinkle with grated Parmesan cheese. Recipe for spaghetti and meatballs serves 4.
