Spaghetti Sauce

A unique spaghetti sauce recipe made with a pork roast and ground beef, a family favorite from Chaz.

Ingredients:

1 pork roast
1 bunch green onions -- sliced
4 cloves garlic -- minced
2 cans tomato juice
2 quarts tomatoes
12 ounces tomato paste
2 cans tomato sauce
5 teaspoons Italian seasoning
salt and pepper -- to taste

Meatballs
1/4 pound sausage -- Jimmy Dean is best
1 1/2 pounds ground beef
2 stalks celery
1 1/2 cups dry bread crumbs

Preparation:

In a large pot brown pork roast in 2 tablespoon oil. Once browned add garlic and onions. Cook for 10 minutes on med-low heat until green onions are limp. DO NOT BROWN GARLIC. Add tomatoes, tomato sauce, tomato paste, tomato juice, Italian seasoning, and salt and pepper. Simmer without lid for at least six hours stirring occasionally to prevent scorching. After six hours remove pork roast and let cool. While roast is cooling make meatballs and drop in sauce and simmer for one hour. Tear or cut up pork roast and add to sauce.

Cook 1 medium package of spaghetti according to package directions. Drain and rinse. Serve sauce over spaghetti.
