Spiced Spaghetti Sauce with Ground Beef

This ground beef and zucchini spaghetti sauce is spiced with just a hint of cinnamon, and it's quick and easy to prepare and cook in the microwave oven or on the stovetop. Serve over hot cooked spaghetti or similar pasta for a tasty everyday meal.

Cook Time: 45 minutes

Total Time: 1 hour

Yield: Serves 4 to 6

Ingredients:

  • 1 pound ground beef or turkey
  • 1 tablespoon olive oil if cooking on stovetop
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup sliced zucchini
  • 1 cup chopped green bell pepper
  • 1 (8 oz.) can tomato sauce
  • 2 tablespoons minced parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano, crushed
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon pepper

Preparation:

In a large skillet or Dutch oven brown the ground beef in the olive oil over medium heat. Add the chopped onion and garlic and saute for about 3 minutes longer, until onion is tender. Add the remaining ingredients, reduce heat to low, and simmer for about 45 minutes, or until zucchini is tender.

To make in the microwave oven:

Crumble ground meat into a 2-quart microwave-safe casserole. Add onion and garlic; cook, covered, on HIGH (100% power) for about 6 to 7 minutes (longer in low wattage ovens), stirring once. Drain meat; transfer to another container and set aside. Combine remaining ingredients in the microwave-safe casserole. Cook, covered, on high for about 5 to 7 minutes, until zucchini is tender. Stir in browned ground beef and spoon over hot cooked spaghetti or other similar pasta.
This spaghetti sauce recipe will make 4 to 6 servings.
