Ingredients:
- 1 pound ground beef or turkey
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 cup sliced zucchini
- 1 cup chopped green bell pepper
- 1 (8 oz.) can tomato sauce
- 2 tablespoons minced parsley
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano, crushed
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon pepper
Preparation:
Crumble ground meat into a 2-quart microwave-safe casserole. Add onion and garlic; cook, covered, on HIGH (100% power) for 5 to 7 minutes (longer in low wattage ovens), stirring once. Drain meat; transfer to another container and set aside. Wipe excess grease from casserole with paper towels. Combine remaining ingredients in the casserole. Cook, covered, on high for 5 to 7 minutes, until zucchini is tender. Stir in hot meat; spoon over hot cooked spaghetti or polenta.This spaghetti sauce recipe makes 6 servings.
