Cook Time: 15 minutes
Ingredients:
- 2 tablespoons Olive oil, to 3 tbsp
- 2 cloves Garlic, minced
- 2 cups Canned crushed tomatoes
- 2 tablespoons Fresh basil; chopped, OR 1 1/2 teaspoons Dried basil
- 1 pound asparagus; cut into 1-inch pieces, tips separated
- 1/4 cup Dry white wine, to 1/2 cup
- Sugar, to taste
- Salt, to taste
- Pepper, to taste
- Fettuccine; or other pasta, freshly cooked
Preparation:
Heat olive oil in a large skillet; add garlic and saute for a minute. Add crushed tomatoes and basil. Bring the mixture to a boil and simmer for about 5 minutes. Add cut asparagus but not tips. Simmer the asparagus in the sauce until tender, then add the tips. Cook a few minutes. more. Stir in white wine. Taste and add a touch of sugar if desired, and salt and freshly ground pepper. Serve over hot pasta.Serves 4.
