Janet's Crab Bites

Thanks to Janet for sharing these crab bites. Serve these tasty crab appetizers with cocktail sauce or remoulade sauce.

Chill: 1 hour

Total Time: 1 hour, 24 minutes

Yield: 36 Appetizers

Ingredients:

  • 8 ounces crab meat
  • 1 1/2 cups soft breadcrumbs
  • 1 egg, beaten
  • 2 tablespoons cocktail sauce
  • 2 tablespoons mayonnaise
  • 2 tablespoons minced green onion
  • 2 teaspoons chopped fresh parsley
  • 1/2 teaspoon dry mustard
  • dash cayenne pepper
  • dash black pepper
  • 1 cup crushed potato chips
  • cocktail sauce for serving

Preparation:

In a large bowl, combine the crabmeat, bread crumbs, beaten egg, 2 tablespoons cocktail sauce, mayonnaise, green onion, parsley, mustard, and peppers; mix well. Cover; chill for 1 hour. Form crab mixture into balls, using rounded teaspoon for each. Roll balls in crushed potato chips; place on baking sheet. Bake in preheated 425° F. oven for 10 to 12 minutes or until hot and nicely browned. Serve these crab appetizers with cocktail sauce.

Makes about 36 crab bite appetizers.
