St Basil Cake Recipe

This traditional Greek cake is served on New Year's Eve. Whoever gets the piece with the coin is believed to have good luck in the new year.

Ingredients:

  • 10 Eggs, separated
  • 8 ounces butter (1 cup)
  • 3 cups sugar
  • zest and juice of 3 oranges
  • zest and juice of 1 lemon
  • 1/4 cup Brandy
  • 1 1/2 tablespoons vanilla extract
  • 6 1/2 cups self-rising flour
  • 1/2 cup sesame seeds
  • 1 coin, wrapped in foil (to adhere to tradition)

Preparation:

In a large mixing bowl, beat egg whites until stiff peaks form. In another bowl, cream the butter, sugar, and egg yolks. Fold creamed mixture into the egg whites. Add the lemon and orange zest and juice. Add the Brandy and vanilla extract. Sift the self-rising flour; add to the batter. Add the coin to batter. Grease and flour a round cake pan. Spoon batter into prepared pan; sprinkle with sesame seeds. Bake at 350 for about 55 to 60 minutes, or until firm in the middle.

"This recipe was the first one I saw for St. Basil cake. I followed the directions to the letter, only to find that the recipe did not say how large of a round pan to bake in. There was so much batter that I could have filled 4 regular pans (which I did not have). I put the cake batter in a round bundt pan instead and had the cake dripping all over the bottom of the oven. Recipes need to be more concise!!"
