Sour Milk Ginger Cake

Ingredients:

  • 1/4 cup butter, room temperature
  • 1/2 cup sugar
  • 1 egg, well beaten
  • 1/2 cup molasses
  • 1 2/3 cups flour
  • 1/2 teaspoon soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup sour milk (add about 1/2 teaspoon of vinegar to milk and let stand for a few minutes to sour), or buttermilk
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon

Preparation:

Cream butter and 1/2 cup sugar until light and fluffy; add egg and molasses, blending well. Sift next 5 ingredients together into another container; add to creamed mixture, alternating with the milk; beat until smooth. Pour into 9X13-inch baking. Combine 2 tablespoons sugar and the cinnamon; sprinkle evenly over the batter. Bake at 350° for about 35 to 45 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Serves about 15 people.
