Spice Cake Loaf

Light cake and dark spice cake give this spice cake a marbled look.

Cook Time: 1 hour

Ingredients:

  • 2 cups sifted cake flour, sift before measuring
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs, beaten
  • 2/3 cup milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons molasses

Preparation:

Sift flour, baking powder, and salt together 3 times. Cream butter with electric mixer on medium speed; gradually beat in sugar and beat until light and fluffy. Add eggs and beat well. Add flour mixture alternately with the milk, beating well after each addition. Beat until smooth.

Divide batter into two parts. To one part add spices and molasses. Spoon plain and dark batters into a greased 9x5x3-inch loaf pan, alternating the light and dark batters. Bake at 350° for 1 hour to 1 hour and 15 minutes, or until done. Spread with Seafoam Frosting or Cream Cheese Frosting.
