Fall Spice Cake

A favorite spice cake from Razz.

Cook Time: 30 minutes

Ingredients:

  • 1/2 cup (1 stick) butter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 cups applesauce
  • 1/2 cups raisins
  • 1/2 cup brown sugar, firmly packed

Preparation:

Preheat oven to 350°. Melt the butter in a 9x13 pan in the oven.

Sift together the flour, sugar, soda, baking powder, cinnamon, cloves, nutmeg and salt. Stir the flour mixture into the pan. Add the applesauce and raisins. Stir the batter until all ingredients are well combined. Sprinkle the top with brown sugar. Bake for 30 minutes or until toothpick or cake tester inserted in the center comes out clean. SO GOOD! And the scent is heavenly!

Note from Razz: The applesauce keeps it incredibly moist and flavorful, and the brown sugar on top gives a crunchy flavor. DH and I had some warm with a mug of apple cider!

"This is just like a cake that my little German Grandmother used to make as long as there were apples in the cellar...the only thing I changed was to grate 3 fresh Gravenstein apples instead of commercial applesauce. Golden delicious work too...never have to worry about it getting stale at my house, it is gone before it gets cool...thank you so much!"
