Economy Spice Cake

Spice cake with a boiled raisin sugar mixture.

Ingredients:

  • 1 cup water
  • 2 cups raisins
  • 1 cup brown sugar
  • 1/3 cup shortening
  • 1/2 tsp cinnamon
  • 1/2 tsp. allspice
  • 1/2 tsp. salt
  • 1/8 tsp. nutmeg
  • 2 cups cake flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1 cup chopped pecans, optional

Preparation:

In saucepan, combine 1 cup water, raisins, brown sugar, shortening, cinncmon, allspice, salt, and nutmeg. Bring to a boil and boil for 3 minutes. Let cool.

Sift the cake flour with baking powder and soda; stir flour mixture gradually into the cooled mixture. Beat the batter until smooth. Stir in chopped pecans, if using.

Bake the cake in a greased 9-inch tube pan in preheated 325° oven for 1 hour or more, until a wooden pick or cake tester inserted in center comes out clean.

"Please don't waste your ingredients or time on this one. There is absolutely nothing good about it. It is flat, tough, and worse than any gingerbread you ever tasted, though it tastes like gingerbread. It needs eggs or more shortening or milk, or I guess even more water might help it. Yuck! I was planning for this to be a special cake but the only ones who will get it are the crows in my back yard!"
