Ginger Cookie

Ingredients:

  • 1 egg
  • 1 cup sugar
  • 3/4 cup shortening
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1/4 cup dark molasses
  • 1/4 teaspoon salt
  • 2 cups flour
  • 2 1/2 teaspoon soda

Preparation:

Mix egg, sugar, shortening (I use half margarine and half Crisco), spices and molasses. Stir in flour and soda. Add more flour if dough seems too soft; working with a chilled dough is easier. Form dough into small balls. Roll in sugar, but do not flatten. Bake at 350-375 degrees for 10 - 12 min. Cookies will puff up. Take out just before they start to flatten again. While warm frost with powdered sugar frosting. People always ask me for my recipe when I take these cookies along. You can vary the crispness by the amount of flour you add and the time you bake them.

"Very flavorable; too crunchy however, even made with brown sugar. I rolled them into balls and baked them which softened them considerably."
