Hermit Cookies

Hermits - Hermit Cookies

These hermits are great everyday cookies kids love. Feel free to use dried cranberries in place of the raisins. They're great for a party, or take them along to a family gathering or potluck event.

Yield: Makes About 4 Dozen Cookies

Ingredients:

  • 1 3/4 cups all-puspose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup packed light brown sugar
  • 1/4 cup shortening
  • 1/4 cup butter, softened
  • 1/4 cup orange juice
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups raisins
  • 3/4 cup chopped pecans or walnuts

Preparation:

Heat oven to 375°.

In a bowl or on a sheet of waxed paper, combien the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.

In a mixing bowl with an electric mixer, cream the sugar, shortening, and butter together until light and creamy. Beat in the orange juice, vanilla, and egg until the mixture is smooth and well blended. Add the flour and spice mixture and stir until blended. Stir in the raisins and nuts.

Drop the dough by rounded teaspoonfuls onto ungreased cookie sheets, leaving about 2 inches between each cookie.

Bake until set, about 8 to 10 minutes. With a spatula, immediately remove the cookies to a rack to cool.

Makes about 4 dozen hermit cookies.
