Spinach Casserole

Spinach casserole recipe includes hard cooked eggs, a homemade white sauce, shredded cheese, and cooked bacon.

Cook Time: 30 minutes

Ingredients:

  • 1 1/2 pounds washed, chopped spinach
  • salt and pepper
  • 2 to 3 hard-cooked eggs, sliced
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3/4 teaspoon salt
  • 1/8 teaspoon paprika
  • 1 1/2 cups milk
  • 1/4 pound shredded Cheddar cheese
  • 3 strips cooked bacon, diced

Preparation:

Place chopped spinach in a greased shallow baking dish; season with salt and pepper then arrange sliced eggs over spinach.

In a saucepan, melt 3 tablespoons butter; blend in 3 tablespoons flour. Add salt and paprika. Gradually stir in milk. Cook, stirring constantly, until sauce is thick. Add shredded cheese and stir until melted. Pour sauce over spinach and eggs; top with diced bacon. Bake at 350° for 25 to 30 minutes.
Serves 4 to 6

Very good use of fresh spinachMarch 17, 2009By Squinnderella
"I purchased a hugh bag of fresh spinach and was looking for something new to prepare. This recipe is very good. I was not able to put 1.5 pounds of spinach in my gratin disk so I crammed a little over a pound in and used the three hard boiled eggs and sauce. Towards the end of preparing the sauce I was overcome with the urge to add a 1/2 tsp of half sharp paprika, I gave in and it was a good move. Gave it a little zip. Yum...this is a keeper."
