Very good use of fresh spinach, Member Squinnderella

I purchased a hugh bag of fresh spinach and was looking for something new to prepare. This recipe is very good. I was not able to put 1.5 pounds of spinach in my gratin disk so I crammed a little over a pound in and used the three hard boiled eggs and sauce. Towards the end of preparing the sauce I was overcome with the urge to add a 1/2 tsp of half sharp paprika, I gave in and it was a good move. Gave it a little zip. Yum...this is a keeper.
