Ingredients:
- spinach
- salt
- water
- bacon gdrippings
- 1 hot pepper
Preparation:
When I cook spinach, I put a large pot of water on to boil, add a dash of salt. When water is almost ready to boil I drop in the spinach. I add a tablespoon of bacon grease and one whole hot pepper and stir well. When it comes to a boil, I remove from heat, take out the hot pepper, and drain the liquid off (save for other uses). I personally don't care for greens if they are cooked until mushy, but if you want them more tender you could just boil a little longer. I usually serve them straight from the stove, piping hot, and with a splash of white vinegar and a dash of black pepper. At my house, it is a requirement to have corn bread with cooked greens.
