Pepper Steaks with Sirloin Tips
Pepper steaks are made with sirloin tips, onion, garlic, green pepper and stewed tomatoes.

  • 1 pound sirloin tips, cut in serving-size pieces
  • 2 tablespoons oil
  • 1/4 cup chopped onion
  • 1 clove garlic, halved
  • 1 teaspoon salt
  • dash pepper
  • 1 cup beef broth
  • 1 can (14.5 ounces) stewed tomatoes
  • 1 large green bell pepper, sliced in rings
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • 2 tablespoons soy sauce


Directions for pepper steak.
Heat oil in a skillet over medium low heat. Brown meat for about 15 minutes; add onion and garlic. Season with salt and pepper. Add beef broth to the meat. Cover and simmer over low heat until meat is tender, about 25 minutes. Add tomatoes and green pepper; cook 10 minutes longer. Combine remaining ingredients; stir into the meat mixture. Bring to a boil; cook, stirring constantly, 5 minutes longer. Remove garlic. Serve with hot cooked noodles or rice.

I made this recipe which was perfect however I shortened the time. I browned the meat (I used boneless sirloin cut into relatively thin bite sized pieces) with the onions and garlic and some kosher salt and some pepper, for about 5 mintues. Then I simmered the meat for 10 minutes in the broth, lowest heat/covered in a broth made from beef broth crystals dissolved in boiling water (as per the instructions on the jar) instead of canned beef broth. Then I added a red bell pepper - chopped and a can of diced tomatoes, cooked on medium-low for about 7-8 minutes. I added a 1/4 cup of cold water with 2 tablespoons of flour wisked in it to the mixture at the end and cooked on medium for 2-3 minutes to thicken. Served it on rice, my husband and I really loved it. Took about 25-30 min from very start to finish, and a single non stick skillet. It was enough for two of us to have a large portion, but I only had about 3/4 lb of meat.
