These tasty green bell peppers are stuffed with a mixture of rice, tomatoes, onion, and bacon.

Ingredients:
- 3 large green bell peppers, seeded and halved lengthwise
- 3 medium tomatoes, peeled and coarsely chopped
- 6 strips of bacon cut into quarters
- 1 teaspoon onion, chopped
- 1 cup cooked rice
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 to 3/4 cup hot water
Preparation:
Heat the oven to 350° F.
Reserve 6 pieces of the bacon to top the peppers. In a large skillet, saute the
remaining bacon pieces with onion until the bacon is just crisp; add the diced tomatoes to the skillet. Add
the rice, salt, and pepper; mix to blend ingredients. Spoon mixture into pepper halves,
topping each with the remaining slices of bacon. Arrange in a baking dish;
add water to the dish and cover tightly with foil. Bake 15 to 20 minutes.
