Brown Sugar Hazelnut Cookies

Brown sugar cookies with hazelnuts and vanilla, along with brown sugar, butter, and an easy icing.

Cook Time: 7 minutes

Ingredients:

  • 3/4 cup butter, softened
  • 2 cups firmly packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup finely chopped hazelnuts, or use almonds or macadamia nuts
  • .
  • Icing:
  • 2 cups confectioners' sugar
  • 2 tablespoons plus 1 teaspoon milk, approximately

Preparation:

In a mixing bowl combine the butter, sugar, eggs, and vanilla, blending thoroughly. Blend in flour, baking powder and salt. Stir in chopped hazelnuts. Roll dough out about 1/8-inch thick on a floured surface; cut into shapes. Place on ungreased cookie sheets. Bake in preheated 375° oven for 5 to 7 minutes, until just lightly browned. Frost with the icing or use your own decorations. Makes about 4 to 5 dozen cookies.

Icing:
Blend icing ingredients, using enough milk to make it spreadable; frost the cooled cookies.

"Loved this recipe, easy and so yummy. I used almonds instead and they came out great my son loved them. Crispy,,yet moist inside. I also added some almond extract to the icing,,, wow sooo yummy!!!!"
