Spicy Squash Casserole

Squash casserole recipe with tomatoes and chiles.

Prep Time: 10 minutes

Cook Time: 35 minutes

Ingredients:

  • 3 yellow summer squash, sliced, about 4 cups
  • 1 tablespoon vegetable oil
  • 1/4 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 1 (4-ounce) jar processed cheese spread
  • 1 (10-ounce) can tomatoes with green chile peppers
  • Tortilla chips

Preparation:

In a large saucepan, cook squash until tender; drain and mash. In a skillet, heat oil; saute onion and green pepper in until tender. Add squash, cheese and tomatoes. Place squash mixture in a buttered 2-quart casserole dish; sprinkle broken tortilla chips on top. Bake at 350° for about 25 minutes or until casserole is bubbly.
Squash casserole serves 4 to 6.
