Garden Squash Skillet

This is an easy summer squash recipe, made with summer squash, zucchini, carrots, butter, Parmesan cheese, and other ingredients. It's a great way to enjoy both summer squash and zucchini in one dish. Feel free to use all zucchini or all yellow summer squash, or add a little patty pan or similar squash to the mix.

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: Serves 4 to 6

Ingredients:

  • 2 medium zucchini
  • 2 medium yellow summer squash
  • 1 cup thinly sliced carrots
  • 4 to 6 ounces sliced mushrooms
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 cup grated Parmesan cheese

Preparation:

Heat oil in a skillet over medium-high heat. Add vegetables and cook, stirring, for about 8 minutes, or until tender but still a little crisp. Add butter and toss with the cheese. Let stand for 5 minutes before serving.
Serves 4 to 6.

A great way to use your fresh garden squash. Everyone really liked it, especially my middle daughter who is in culinary school. Better than regular fried squash without all the calories. A very colorful dish with the green and yellow squash and orange carrots. A real ""keeper"".
