Summer Squash Pancakes

These summer squash pancakes are easy to make and make a tasty and different side. They're good with grilled meats, fish, or chicken.

Ingredients:

  • 3 cups grated yellow summer squash or zucchini
  • 1/2 teaspoon salt
  • 1 tablespoon fresh chopped parsley
  • 1 medium clove garlic, minced
  • 3/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 cup biscuit mix
  • dash pepper
  • milk, as needed

Preparation:

Combine all ingredients in a mixing bowl. Add enough milk as necessary to make a thin pancake-like batter. Drop by spoonfuls onto hot oiled griddle or skillet. Turn over when bottom is golden and cook until browned on both sides.

My daughter said I have to make it again!, Member mangonoodles

Read the other review, so added more salt, and omitted garlic, and added garlic and onion powders. My daughter and I really enjoyed them with ketchup. Next time, to add some crunch into the texture, I will try it with green or regular onions, and skip onion powder. Will stick to garlic powder, unless I have fresh garlic on hand, unlike today I only had the minced in the jar kind and that wasn't gonna be good for this. I'll add more herbs too.
