Ingredients:

  • 1 1/2 cups warm mashed sweet potatoes
  • 1/2 cup granulated sugar
  • 4 tablespoons melted butter
  • 1 egg, slightly beaten
  • 1/2 cup flaked coconut
  • 1/3 cup milk
  • 1/2 teaspoon vanilla
  • .
  • Topping:
  • 1/2 cup light brown sugar
  • 1/2 cup pecan pieces
  • 1/4 cup flour
  • 4 tablespoons butter, melted
  • dash salt

"I dont normaly do any cooking, but while shopping I put a sweet potatoe in the basket, not knowing what to do with it I got onto your web site for a recipe, I boiled the potatoe after chopping it into one inch cubes,and when soft I drained it and mashed it with a little salt pepper and butter, I then raided the fridge and found a small peice of pork left over from the wekend, which I diced into small peices and added to a chopped onion and fried off in the frying pan, when cooked I put the mixture into a mixing bowl and added the mashed sweet potatoe and a egg, I then mixed it all together and formed four cakes which I covered with plain flour and then fried them in about a table spoon of vegetable fat in the frying pan, they taste much better if you let them burn slightly, my wife thinks am great and wonders where I got the recipe from, I have not told her it was one from the internet that sort of got mixed up."
