Sweet Potato Casserole

A sweet potato casserole with pecan and coconut topping. Scroll down to see more sweet potato recipes.

Ingredients:

  • 3 cups sweet potatoes, mashed
  • 1 cup granulated sugar
  • 1/4 cup butter
  • 3 eggs
  • 1/2 cup milk
  • 1/2 teaspoon vanilla
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • .
  • Topping:
  • 1 cup chopped pecans
  • 3/4 to 1 cup flaked coconut
  • 1 cup packed brown sugar
  • 1/2 cup flour
  • 1/4 cup butter

Preparation:

Combine mashed sweet potatoes, granulated sugar, 1/4 cup butter eggs, vanilla, lemon juice, salt, cinnamon, and nutmeg; blend well. Spoon sweet potato mixture into a buttered baking dish. Mix topping ingredients until crumbly; sprinkle over casserole. Bake at 350° for 30 minutes.

Very delicious -- a big success!November 27, 2008By pschlemenson
"I prepared this dish for a Thanksgiving potluck. It was a tremendous success! There was a professional chef attending who told me that the sweet potato casserole was far and away the best dish at the dinner. Many other people said they really loved it. A couple of people mentioned more than once how much they liked it. There is a comma missing between 'butter' and 'eggs' in the Preparation section; 'milk' is missing from the section as well. The size of baking dish wasn't specified; I used a 3-quart pyrex dish, which was just a little big, but worked just fine. It would be very helpful to have a little direction about how to mash the sweet potatoes; I boiled them with the skins on for about 25 minutes, then peeled them and mashed them with the other ingredients. I have saved this recipe and plan to make it for Christmas and next year, too. Thank you to Diana Rattray and About.com."
