Sweet Potato Souffle

An old-fashioned sweet potato casserole recipe with eggs and chopped nuts. Scroll down to see more recipes for sweet potatoes.

Ingredients:

  • 4 cups sweet potatoes, cooked, mashed
  • 1/4 cup butter, softened
  • 1/2 cup sugar
  • 3 eggs, beaten
  • 1/4 teaspoon salt
  • 1/4 cup pecans or walnuts, chopped

Preparation:

In large mixing bowl, beat together hot mashed sweet potatoes, butter, sugar, eggs, and salt until fluffy. Turn into a 1 1/2-quart baking dish and sprinkle with pecans or walnuts. Bake at 350° for 45 minutes. Serve immediately.
Serves 6.
