Ingredients:
- 4 cups sweet potatoes, cooked, mashed
- 1/4 cup butter, softened
- 1/2 cup sugar
- 3 eggs, beaten
- 1/4 teaspoon salt
- 1/4 cup pecans or walnuts, chopped
Preparation:
In large mixing bowl, beat together hot mashed sweet potatoes, butter, sugar, eggs, and salt until fluffy. Turn into a 1 1/2-quart baking dish and sprinkle with pecans or walnuts. Bake at 350° for 45 minutes. Serve immediately.Serves 6.
