Sweet Potatoes with Apple Slices

Sweet potatoes are cooked and sliced then layered with apples and baked with sorghum and cinnamon and other ingredients.

INGREDIENTS:

  • 2 large apples, tart, unpeeled
  • 2 tablespoons butter
  • 2 large sweet potatoes, boiled and cooled
  • 2 tablespoons sorghum
  • 2 tablespoons hot water
  • butter and cinnamon

PREPARATION:

Core apples, slice crosswise. Heat butter in a heavy skillet; fry apple slices until just tender, being careful not to break. Cut potatoes in thick slices; sprinkle lightly with salt. Arrange potato slices in a buttered shallow baking dish; top with apple slices. Combine sorghum and hot water; pour over apples and potatoes. Dot with butter and sprinkle with cinnamon. Bake at 350° for 30 minutes.
Serves 4.
