Easy Sweet Potato Casserole
This tasty sweet potato casserole contains butter, vanilla, mashed sweet potatoes, brown sugar, butter, and pecans.

Cook Time: 45 minutes

Total Time: 45 minutes

Ingredients:

  • 2 eggs
  • 1 cup granulated sugar
  • 3/4 cup butter, softened
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 3 cups cooked mashed sweet potatoes

  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 2 tablespoons butter, softened
  • 1/2 cup chopped pecans

Preparation:

Beat eggs, granulated sugar, and 3/4 cup butter. Add milk and vanilla. Combine with the mashed sweet potatoes; spoon into a greased 2-quart casserole. Combine brown sugar, flour, 2 tablespoons softened butter, and pecans, mixing until crumbly; sprinkle over sweet potatoes. Bake at 350° for 45 minutes.
Serves 6.

Perfect in Every Way, Member srpostma

My mother called me on Thanksgiving morning to see if I had a good recipe for sweet potatoes. I did what my daughter always does - typed into Google. This is the first recipe that came up & it said easy. It was SO good the 4 of us almost ate the entire thing even after the turkey. We had it with our meal, then added whipped cream to another serving for dessert. This will be a new tradition at our house for several special occasions. I can't thank you enough!!!
