Sweet Potato and Apple Casserole

Cook Time: 45 minutes

Ingredients:

  • 6 medium baking apples, peeled and sliced
  • 1/2 cup maple syrup
  • 1/2 cup light brown sugar
  • 1/2 cup butter
  • salt, to taste
  • 4 medium sweet potatoes
  • 1 cup chopped pecans

Preparation:

Combine apple slices, maple syrup, brown sugar, and butter in a medium saucepan. Cook over medium-low heat until apples are tender; add salt to taste. Bake sweet potatoes in their jackets until tender; peel and slice. Layer apples and potatoes in 4 layers in a buttered 2-quart casserole, beginning with potatoes and ending with apples. Top with chopped pecans. Bake for 30 to 45 minutes in a 350° oven. Serves 6 to 8.

"My picky 16 year old daughter hates sweet potatoes. But has asked for this dish I know atleast once a month since Thanksgiving 2006. It is wonderful. It will be on out table this year again."
