Sweet Potato Pudding

  • 2 eggs, separated, room temperature
  • 1/4 cup butter or margarine
  • 1/2 cup firmly packed light brown sugar
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • dash ground ginger
  • 1 cup mashed cooked sweet potatoes


In a medium mixing bowl, beat egg whites until stiff peaks form. Beat yolks in a separate bowl. In a mixing bowl, cream together butter and sugar; add well-beaten egg yolks, milk, salt, nutmeg, cinnamon, ginger, and sweet potatoes. Fold in beaten egg whites. Turn mixture into a buttered 1 1/2-quart casserole. Bake at 350° for 40 minutes. Serve with cream or a caramel sauce. Serves 4.

Wife wanted dessert and I found one to make, Member bill_roehl

My wife said, ""I want dessert,"" and while we had just gone shopping yesterday we really didn't have much in the house that would have satisfied her need out of the box (so to speak). I knew we had a sweet potato from two weeks ago in the fridge that I needed to get rid of so I started surfing the web for ""sweet potato dessert"" and came across this little gem. We had everything on hand to make it and I got started. About an hour later we had a really tasty dessert that reminds us a lot of a creamy pumpkin pie. The hardest part was getting the egg whites whipped up but the Kitchen Aid did all the real hard work for us and once it was in the oven it smelled wonderful. Forty minutes later we had a great dessert that we attempted to pour homemade caramel over but found it completely unnecessary. Stick the recipe and you won't be disappointed :)
