Cook Time: 20 minutes
Ingredients:
- 3 pounds sweet potatoes, cooked with skins on
- 4 ounces butter, melted
- 1/2 cup brown sugar, packed
- 1/4 cup orange juice
- 1 1/2 teaspoons cinnamon
- salt, to taste
- 1 1/2 cups graham cracker crumbs
Preparation:
Peel cooked sweet potatoes then mash. Combine mashed sweet potatoes with 4 tablespoons of butter (2 ounces), the brown sugar, orange juice, cinnamon, and salt. Mix well.In a separate bowl, combine graham cracker crumbs with remaining melted butter.
Spread sweet potato mixture in a buttered 2-quart casserole dish. Top with
buttered crumbs. Bake in a preheated 400 degree oven for about 20 minutes,
or until hot and bubbling.
