- 8 tablespoons (4 ounces) butter, softened
- 1 cup light brown sugar, packed
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 cup sweet potato puree, canned or homemade
- 2 1/4 cups all-purpose flour, about 10 ounces
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- dash allspice
- 1/2 cup chopped walnuts or pecans
- 1/2 cup mini chocolate chips
In a mixing bowl with an electric mixer, cream butter and brown sugar until light. Beat in the egg and vanilla. Blend in the sweet potato puree.
Add the flour, baking powder, soda, salt, cinnamon, nutmeg, and allspice. Mix until smooth and well blended. Stir in the nuts and mini chocolate chips.
Spread in the prepared loaf pan. Bake for 55 to 50 minutes, until a toothpick inserted in the center of the loaf comes out clean.
Cool in the pan for 10 minutes. Carefully remove to a rack to cool completely.
Makes 1 loaf cake.
