Freezing Vegetables - Sweet Potatoes

Preparation:


There's no need to peel before cooking. Sort sizes; wash.

Blanching Time:


Sweet potatoes are cooked until nearly tender. Boil, steam, or use a pressure cooker to cook them. Peel; cut in halves, slice or mash. Cool immediately. To prevent discoloring, dip whole peeled or sliced sweet potatoes in a combination of 1/2 cup lemon juice to 1 quart water. For mashed sweet potatoes, add 2 tablespoons of lemon juice or orange juice into each quart and blend well.

Pack:


Leave 1/2 inch of headspace. You may roll pieces in sugar before packing or pack in cold 50% syrup.
