Sweet Potato Fritters

Ingredients:

  • 2 cups mashed sweet potatoes
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 4 teaspoons melted butter
  • 2 eggs
  • 1 cup milk
  • 1 tablespoon sugar

Preparation:

Combine melted butter with potatoes, sugar, milk and egg yolks. Sift flour, measure and sift with baking powder and salt. Add to the first mixture. Beat egg whites until stiff peaks form; fold into the batter. Drop by teaspoonfuls into hot deep fat, at 365°. Fry in batches until browned; remove with slotted spoon to paper towels or brown paper to drain. Sprinkle with powdered sugar or serve with syrup.

Fritters : ""handgranaded"", Member Carl_In_WA

I followed the instructions exactly . Kids were all excited about dinner with sweet-potato fritters. Well hold on, it is fritter pieces. It start of nicely in the oil and then it breaks apart drifting in all directions. Very very disappointed. What ever the reason you might have if any for the fail, kindly advise readers in the future to any possible pitfalls. I am now going to try and add more flour... no idea if i can save this. :( PS: I chose this recipe out of so many on the web as it seemed straight forward.
