Sweet Potato Croquettes

Ingredients:

  • 6 small sweet potatoes, peeled cooked until tender, mashed
  • 2 tablespoons butter
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • marshmallows, regular size
  • cornflake crumbs
  • oil for deep frying

Preparation:

Season the mashed sweet potatoes with the butter, sugar, cinnamon and salt. Shape into balls around each marshmallow, making sure marshmallow is completely covered. Chill for 3 to 4 hours. Roll croquettes in cornflake crumbs and fry in hot oil, approximately 370°. Drain on paper towels and serve immediately.
Serves 4.

Great Sweet Potatoe Recipe, Member owingsn

When I was growing up, my grandmother always made these for me and I loved them so much. They are delicious!! I am glad to find a recipe so I can try to make them for my grandchildren.
