Ingredients:
- 6 small sweet potatoes, peeled cooked until tender, mashed
- 2 tablespoons butter
- 1/3 cup sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon salt
- marshmallows, regular size
- cornflake crumbs
- oil for deep frying
Preparation:
Season the mashed sweet potatoes with the butter, sugar, cinnamon and salt. Shape into balls around each marshmallow, making sure marshmallow is completely covered. Chill for 3 to 4 hours. Roll croquettes in cornflake crumbs and fry in hot oil, approximately 370°. Drain on paper towels and serve immediately.Serves 4.
