Maple and Brown Sugar Glazed Sweet Potatoes

These easy sweet potatoes are glazed with a fabulous mixture of maple syrup, brown sugar, and cinnamon. The potatoes are boiled briefly before they are sliced, so they take less time in the oven than similar recipes. 

While many attribute sweet potatoes with the traditional (and yummy) sweet potato casserole topped with marshmallows, there's no need to wait until the holidays to enjoy these delicious root vegetables. Sweet potatoes can be cooked in numerous ways including baked, grilled, steamed, and fried. 

This recipe makes it so simple to enjoy these potatoes anytime, and both adults and kids alike will devour them as they are just so good. Serve these delicious caramelized sweet potatoes with a ham dinner, pork chops, or your favorite protein.

Ingredients

  • 2 pounds medium sweet potatoes

  • 1/4 cup (2 ounces) unsalted butter

  • 1/4 cup maple syrup

  • 1/4 cup light brown sugar, firmly packed

  • 1/2 teaspoon ground cinnamon

Steps to Make It

  1. Gather the ingredients.

  2. Scrub the sweet potatoes and then place them in a large saucepan; cover with water.

  3. Bring the sweet potatoes to a boil; reduce the heat to low, cover the pan, and cook for about 5 to 7 minutes, or until just tender. Drain well.

  4. Preheat the oven to 350 F. When the potatoes are cool enough to handle, peel them and cut them into chunks or thick slices.

  5. Place the cut-up sweet potatoes in a buttered 2-quart baking dish.

  6. In a saucepan, combine remaining ingredients; cook until mixture boils. Pour over potatoes in the baking dish.

  7. Bake in the preheated oven for 30 minutes, or until hot and nicely glazed. 

  8. Serve and enjoy!

Tips

  • Use a scrub brush and fruit and vegetable wash to thoroughly clean the potatoes. 
  • This recipe can be easily scaled up or down, depending on how many servings you need.
  • Mash any leftover potatoes, and reheat for another meal. They're just as good! Put a pat or two of homemade cinnamon butter on them for an even more decadent sweetness.

How to Store

  • Leftover glazed sweet potatoes can be placed in an airtight container or plastic bag and stored in the refrigerator, where they will keep for up to five days.

Recipe Variation

  • Sprinkle in some of your other favorite spices, including nutmeg or ginger.
  • To make the dish even faster, use canned sweet potatoes in place of fresh sweet potatoes.
