Sweet Potato Patties

Sweet potatoes are mashed and shaped into patties, coated with crushed corn flakes then baked.

Cook Time: 25 minutes

Ingredients:

  • 3 cups cooked mashed sweet potatoes
  • 1 tablespoon melted butter
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 2 cups crushed corn flakes

Preparation:

Combine sweet potatoes, butter, milk, salt, and sugar. Form into 6 patties; roll in corn flakes to coat. Place on a greased baking sheet and bake at 325° for 25 minutes.
Serves 4 to 6.

"I used 3 c of leftover Ruby Red organic sweet potatoes from Thanksgiving Dinner that were baked with maple syrup and apple juice, so they were quite sweet. I also ""veganized"" the recipe, using vegan margarine and soymilk. I ended up using 3 cups of crushed corn flakes, as the mix is tender and needs some light handling, but very easily accomplished by simply putting a dollop (1/4 c or so) of sweet potato in the dish of crushed crumbs, pour crumbs all over it, and then begin to form a patty, letting corn flakes become part of the patty, as needed, and then finally coating well. I then baked them 20 minutes at the given temperature, flipped them gently and baked another 10 minutes. It made 18 patties and they are super good, sweet and crunchy. Enough for an army or to freeze for another time."
